Summer Crunch: Strawberry & Melon Yogurt Bark

π Ingredients:
500g Thick Greek Yogurt (Full-fat or 5% works best for a creamy texture)
2 tbsp Honey or Maple Syrup
1 tsp Vanilla Extract or Vanilla Bean Paste
1 pack Bonny Bite Crunchy & Puffed Strawberries
1 pack Bonny Bite Dried Melon, roughly chopped
1 tbsp Desiccated coconut or chia seeds (for an extra nutrient kick)
Method:
1.Prep your tray: Line a large baking tray or rimmed baking sheet with baking parchment. Make sure the tray can fit flat into your freezer before you start!
2.Mix the yogurt base: In a bowl, mix together the Greek yogurt, honey (or maple syrup), and vanilla extract until completely smooth and combined.
3.Spread it out: Pour the yogurt mixture onto your lined tray. Use the back of a spoon or a spatula to spread it evenly into a rectangle. You want it to be about 1cm thickβtoo thin and it will break instantly; too thick and itβs hard to bite into.
5. Generously scatter the Bonny Bite Puffed Strawberries and chopped Dried Melon all over the top. Gently press down on the fruit with the palms of your hands to ensure they stick into the yogurt. Sprinkle with desiccated coconut or chia seeds if using.
6.Freeze and break: Place the tray flat in the freezer for 3 to 4 hours, or until completely solid. Once frozen, peel the bark off the parchment paper and use your hands to snap it into rustic, jagged shards.
